One of our all-time favorites, perfect for a midday snack (especially during a Sunday afternoon football game, when healthy food can be hard to come by), is the TB12 Chunky Guacamole.

 

Why It’s So Good for You

 

Avocado provides an excellent boost of unsaturated fats, and it can raise your body’s level of good cholesterol. Avocados are also a good source of fiber, potassium, folate, and Vitamins B, C, and E.

 

It’s important to note that guacamole should be eaten right after it’s prepared. The enzymes that cause avocados to oxidize make guacamole look unappealing, and more importantly, they make the taste bitter.

 

Serving Size

 

This recipe is for 2 servings (about 1 cup), but you can double or triple it, if desired. It only takes 10 minutes to make!

 

The Ingredients

 

   1/4 cup of diced white onion, rinsed and strained

   1 clove of garlic, finely grated or minced

   1/2 teaspoon of Himalayan salt (you can add more at the end, if you’d like)

   1/4 teaspoon of ground coriander

   Zest of 1 lemon or lime + 1 tablespoon of fresh juice

   1 ripe Hass avocado

   12 fresh basil leaves, rolled and sliced into thin ribbons

   1/2 green jalapeño, seeded and finely diced (optional)

 

How to Make It

 

We said it was easy to make, and we weren’t kidding. Follow these simple instructions and enjoy!

 

1)    Place the onion, garlic, salt, coriander, and lime juice in a bowl. Zest the citrus into a mix and stir to combine them.

 

2)    Run your knife around the avocado lengthwise, carefully cutting it down to the pit. Twist the avocado in half and remove the pit.

 

3)    With the cut side up, slice the avocado into cubes. With a spoon, scoop the cubes of half of the avocado into a bowl.

4)    Mash with a fork until it’s smooth. Add the cubes of the second half of the avocado, and the basil, and fold them into the mix.

 

5)    Mash slightly, but leave the big chucks mostly intact.

6)    Stir in the jalapeño, if you’re using it, and adjust the salt to your liking. Serve immediately.

 

7) Enjoy!

Pro Tip: Skip the accompanying chips, and serve with veggie sticks or sweet potato toast instead!
