Dressing Ingredients

  • 1/2 cup raw cashews
  • 1/3 cup water, plus more as needed
  • 2 tablespoons organic extra virgin olive oil
  • 1 lemon, juice + zest (about 2 tablespoons juice)
  • 1 1/2 teaspoon grainy Dijon mustard
  • 1-2 garlic cloves
  • 1 1/2 teaspoon capers, rinsed
  • 1/2 teaspoon Himalayan salt
  • 1/2 teaspoon maple syrup

Making the Dressing

Combine all dressing ingredients in a high-speed blender and blend until very smooth, scraping down the sides as needed. This recipe will make about half a cup of dressing and will stay good in the refrigerator for up to 5 days.
