Toast — what’s not to love? It’s crunchy, delicious, comforting, and homey (probably bringing back fond memories of childhood).
But if you’re trying to cut back on carbs (which we strongly encourage), we have the perfect substitute: TB12 Sweet Potato Toast.
No, it’s not actually toast, but it’s stellar substitute that’s very easy to make, absolutely delicious, and rich in fiber. It’s an excellent breakfast option for you and your kids, or as a healthy midday snack.
Why It’s So Good for You
Sweet potatoes are packed with nutritional benefits. In addition to being an excellent source of fiber, as mentioned above, they’re loaded with vitamins and minerals.
According to Healthline, 1 cup (200 grams) of a baked sweet potato (with the skin) contains 4 grams of protein, 6.6 grams of fiber, just 0.3 grams of fat, and 213% (!) of the recommended daily value of Vitamin A.
They also contain plenty of antioxidants, are great for gut health, and research suggests that they might even have anti-cancer benefits.
Serving Size
This recipe calls for one large sweet potato, which makes about 2 servings of two “toasts.” (Though you’ll probably want to make more for later on — trust us, it’s that good.) Strapped for time? Not to worry. It only takes 30 minutes to make.
The Ingredients
It doesn’t get any simpler than this. All you need is three ingredients. (You’ll need some additional ones if you’d like to make variations and enhancements. More on that below.)
All you need is:
• 1 large sweet potato (make sure it’s washed very well)
• 1 tablespoon of organic avocado oil
• Pinch of Himalayan salt
How to Make It
1) Preheat your oven to 400° F.
2) Cut the pointy tips off of the sweet potato, and then cut lengthwise into 1/4-1/2 inch slices.
3) Brush it lightly with oil and season it with salt, then place it flat on a baking sheet lined with unbleached parchment paper.
4) Bake for about 15 minutes, then flip it and bake for an additional 10-15 minutes.
NOTE: The time it takes to bake may vary based on the thickness of your “toast,” but rest assured that it’s ready when they’re tender and golden in color.
5) Serve right away! (If you don’t want to, make sure to cool them in an airtight container in the refrigerator. When you are ready to serve them, heat in the toaster — or the toaster oven — until they’re crisp, and feel free to top them with your favorite ingredients!)
TB12 “Toast” Variations
There’s so much you can do with this “toast”.
We personally love to use it for Avocado Toast, loaded with our chunky guacamole. We also suggest topping it with red onion, sliced radishes, chives, chili flakes, and some sea salt.
You can also make Hummus Toast, topped with hummus (naturally), cucumber slices, sliced scallion, dill, and a few crunchy chickpeas.
